cozy recipes.

Last night we got a dusting of snow
and this morning everything was sprinkled in white,
so I left a little note on Ryan's truck :)



It put me in the mood to get my crock pot out,
it always makes the house smell delicious
and feel cozy,
and try out some new recipes like
lasagna and beef stroganoff
(I didn't know you could make lasagna in the crock pot!
I'm very excited to try it!)
but my all time favorite crock pot dish is chicken enchiladas.
(not this one specifically,
but similar, and it's so yummy!)

Do you have a favorite crock pot recipe?
I'd love to try it out!

I just got the book, "Make it Fast, Cook it Slow" and I LOVE it! I've made Chicken Potpie, Korean Ribs, Thai Curry, and lots of other recipes. I've done lasagna in the Crockpot before and it turned out great! Enchiladas are too! Hope you have a yummy supper!

My husband & I had the same thought last night! I found a beef stew recipe recently that is AWESOME! It's got a little bit of a kick to it, but we love it. Here is the recipe:

Ingredients
2 pounds beef stew meat, cut into 1 inch cubes
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 clove garlic, minced
1 bay leaf
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 onion, chopped
1 1/2 cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped

Directions
1)Place meat in slow cooker.
2)In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture.
3)Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
4)Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

on friday i woke up and right away my day was just going all wrong. I still loaded up my two kiddos to run to buy what i needed for a crock pot beef stew. I managed to put it all together, peel potatoes, and still take care of my little ones. I set it on low and went about my day. At dinner time I realized that although i turned it on, i never actually plugged it in! Not a good day!!!

I LOVE this potato soup when it's cold outside. Roasting the potatoes gives the soup such deep flavor and because you don't use heavy cream, it's kind to your waistline too. http://www.spryliving.com/recipes/view/41518/rosemary-potato-chickpea-soup.html

8 can soup

1 pound Lean Ground Beef, browned
1 (10 3/4 oz) can condensed Tomato Soup, undiluted
1 (10.5 oz) can condensed Vegetable Soup, undiluted
1 (15 oz) can Chili with Beans
1 (15 oz) can Chili without Beans
1 (15 oz) can Mixed Vegetables, undrained
1 (14.5 oz) can Diced Tomatoes, undrained
1 (10 oz) can Diced Tomatoes with Green Chili Peppers, undrained
1 (15 oz) can Whole Kernel Corn, undrained

You are welcome to add or substitute with whatever you have on hand. Do not add water, cook on low for 4-6 hours! Even better the next day :)

Slow Cooker Cheesy Potato Soup
from the Betty Crocker website

1 bag (32 oz) frozen southern-style diced hash brown potatoes, thawed
1/2 cup frozen chopped onion (from 12-oz bag), thawed
1 medium stalk celery, diced (1/2 cup)
1 carton (32-oz) Progresso® chicken broth
1 cup water
3 tablespoons Gold Medal® all-purpose flour
1 cup milk
1 bag (8 oz) shredded American-Cheddar cheese blend (2 cups)
1/4 cup real bacon pieces (from 2.8-oz package)
4 medium green onions, sliced (1/4 cup)

1. In 3- to 4-quart slow cooker, mix potatoes, onion, celery, broth and water.
2. Cover; cook on Low heat setting 6 to 8 hours.
3. In small bowl, mix flour into milk; stir into potato mixture. Increase heat setting to High. Cover; cook 20 to 30 minutes or until mixture thickens. Stir in cheese until melted. Garnish individual servings with bacon and green onions. Sprinkle with pepper if desired.

I like to mix 1 small jar grape jelly with 1 small bottle chili sauce and pour over a bag of meatballs. 4 hours on low and you have great BBQ meatball to serve over mashed potatoes. So yum. Also, a pot roast with Italian seasoning and 1/2 jar of pepperoncini and juice makes a great hot sammie on rolls! (:

Mmmmmm crock pots on cold days....

I love to make what my family has always called "Italian Beef" but it's not very Italian if you ask me! :)
I also don't measure just shake, shake here, shake, shake there....

1- 2-3lb roast
Chili Powder
Oregano (italian?)
Onion Powder
Garlic Powder
2 cubes beef bullion
2 cups water

Cook on High for 4-6 hours

Shred the beef and return it to the au jus. Serve on yummy rolls.

A favorite at my house is Mango peach pulled pork. 2 cups of Mango peach salsa from Costco and 2/3 cup brown sugar. Slow cook for 10 hours. It makes the BEST tacos, burritos, or salad!

I got this recipe off of allrecipes.com. It is delicious and so easy! I serve with fresh cut cilantro, avocado, lime, some cheese and sour cream. You have to try it!

Ingredients
1 pound shredded, cooked chicken
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil

Directions
1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

One of our family favorites is split pea soup ... it was a learned taste for us though!! (I do eyeball the amount of veggies I put in.)

8 cups water
1 package (1 pound) dried split peas
3 medium carrots, cut (1 1/2 cups)
1 medium onion, chopped (1/2 cup)
1 medium stalk celery, chopped (1/2 cup)
about 1 pound of ham (I end up using 2 ham steaks)
1 tsp salt
1 tsp dried thyme leaves
1/4 tsp dried rosemary leaves (crushed)
1/4 tsp pepper

Mix all ingredients in a slow cooker. Cover and cook on low heat 8-10 hours, or until peas and veggies are tender.

For the last half hour to hour, add 8 oz of sour cream. Stir the soup every once in a while.

Blend all of the soup (to make it smooth), and then mix together in a bowl.

I absolutely adore my crock pot. I have too many favorites to post them all, but my most recent winner was Taco Soup.

-2 lb. frozen chicken breasts
-1 pkg taco seasoning
-1 pkg ranch dressing seasoning
-1 medium onion, chopped
-can of Rotel tomatoes, undrained
-can of black beans, undrained
-can of cannelini beans (or any white beans)
-can of kidney beans, undrained
-can of vegetarian baked beans, undrained
-can of corn

Put everything in the crockpot in the order listed above (no need to stir) and cook on low for 6-8 hours. Shred chicken with forks before serving.

Erin, such a great idea for everyone to share recipes. I put recipes on my blog from time to time. Today I made Chicken & Dumplings for dinner and I asked the kids if they wanted Crockpot Lasagna or enchiladas. They voted enchiladas!

You haven't lived til you have made crockpot lasagna! I don't like the cold, but it does make me want to cook comfort food :-)

not really a meal recipe, but I love to use my smaller crockpot to simmer spiced cider! I throw in a sliced orange, whole cloves, cinnamon sticks, allspice berries, etc. and let simmer with the cider until nice and hot and yummy. Oh! I almost forgot....the most important thing is a splash of vanilla extract. You could also add a bit of brown sugar. I make this at holidays, and the whole gallon of cider disappears!

I used my crockpot last night too! I made chicken tacos. I just throw some chicken in the crockpot, sprinkle with taco seasoning, and add some enchilada sauce. Before you're ready to serve, just shred the chicken and then make your tacos. Turned out pretty good!

I'm actually eating crock pot made roast with carrots & green beans right now ;)
I tend to just toss in whatever sounds good and see what comes out!
I left the house this morning with this in the crock pot: chicken breasts, a jar of salsa, a can of white beans, and half of a green pepper chopped up. I put in some water and we'll see what it looks like when I get home! LOL I'll likely serve with rice, tortillas, sour cream & cilantro.

CROCKPOT PIZZA

1-16 oz Kluski Noodles (cooked)
1-3/4 lb ground beef, browned
24 oz pizza sauce
24 oz spaghetti sauce
1-8 oz shredded cheddar
1-8 oz shredded mozzarella
pizza toppings

Combine meat with sauces.
Spray Crockpot.
Layer:
Sauce Mixture
Noodles
Sauce
Pizza Toppings
Cheese - ending 1" from top.
Cook on low 6-8 hours!
