fall & soup.


I love fall...



and I really LOVE fall soups!

To make it more fun for the kids I serve it in bread bowls! Just grab a loaf of french bread (or whatever your favorite with soup is) and cut it into "bowls". Fill with your favorite soup or chili.

I get 3-4 bowls per loaf and the kids love to "eat their bowl"!

And I love how easy it is :)

This one is really good in a bread bowl!

Anyone have some {easy} soup recipes to share? I need some new ones, please share!

Here's our SOUPer easy go to fall soup. It's ideal for nights when there are 359 things going on:

Potato Corn Chowder
1 jar of real bacon bits (or 6 slices of crumbled cooked bacon)
1 (10 oz.) can Cream of Potato Soup
1 (16 oz.) can of cream style corn
2 cups of light cream
2 cans dices potatoes (drained)
Salt and pepper to taste

Combine ingredients in saucepan or crock pot. Add bacon and heat slowly to avoid scorching.

Yield: 4-6 servings

Also, your soup picture looks DELICIOUS!! I'm going to have to try the homemade bread bowls soon!

Wow! Looks great! Can you post the recipe for that one in the picture?

This one is super easy just open a bunch of cans and it's super good!

2 lbs. ground beef, (seasoned with onion powder, lawreys garlic salt, & pepper. Keep smashing and stirring so meat is tiny. Add 1/2 cup water to meat that will help it cook down.

1 small -med red onion diced (cook with meat)

When thoroughly cooked add:

1 regular size can seasoned black beans (if you can find them) they say: "seasoned"

1 regular size can black beans

1 can diced petite cut tomatoes

1 can rotel (Green chiles/tomatoes) (not the JalapeƱo unless you want it hot)

1 small can tomato sauce (add TBS water to rinse bottom of can)

1 can cream corn

1 can low sodium beef broth

1 pkg. Durkee Enchilada Sauce Packet (dry)

1 pkg. Hidden Valley Ranch Packet (dry)

1 TBS parsley flakes

NOTHING DRAINED

Add water if you want it "soupier".

Garnish with sour cream, cheese, red onion and crushed corn chips.

Oooo Erin I am loving that idea, my kids love bread.

Stuffed Cabbage Soup

1 1/2 lb. ground beef & pork
2 tsp Paprika
salt & pepper to taste
1 onion, chopped
2 garlic cloves, chopped
3/4 carrots, chopped (I used matchstick and roughly chopped)
1 lb. thinly sliced green cabbage
1 28 oz can petite diced tomatoes
1 can (14.5 oz?) tomato sauce
1 can (49.5 oz) chicken broth
1 cup white rice (not instant)
3 tbsp chopped fresh dill

Brown & drain meat. Add to stock pot with onion, carrot, garlic, salt, pepper & paprika. Cook for 2-3 minutes. Add cabbage to wilt. Cook 1 minute. Add tomatoes, sauce & broth. Raise heat & bring to a boil. Add rice. Reduce heat and simmer. Cook for 16-18 minutes, until rice is tender. Stir in dill.

Please note, if you don't eat it right away, the rice absorbs a lot of the broth, but it's still plenty tasty...just has more of a stew consistency vs. soup.

I saw my favorite, White Chicken Chili was already posted. I would just add that it is a great one to put in the crockpot for the day! Melted cheese on top is great too!

TACO SOUP

1 pound ground beef
1 (15.5 oz) can pinto beans
1 (15.25 oz) can of whole kernel corn
1 (14.5 oz) can green beans
1 (15 oz) can Ranch Beans, undrained
1 (14.5 oz) can stewed tomatoes
1 (12 oz) Cerveza...BEER
1 (10 oz) Rotel
1 (1 1/4 oz) envelope taco seasoning
5 (6 inch) corn tortillas

Brown beef in a stockpot, stirring until it crumbles & is no longer pink; drain. Return beef to pot.

Rinse & drain pinto beans, corn & green beans, stir into beef. Stir in Ranch Beans & next 5 ingredients. Bring to a boil. Reduce Heat; simmer 30 minutes.

Cut Tortillas into 1/4" strips. Place on a baking sheet, coat with cooking spray. Sprinkle with salt. Bake @ 400 degrees for 5 to 8 minutes.

Ladle soup into bowls & top with tortilla strips.

It's YUMMY!!!! And easy. :)

what a simple idea for soup "bowls" -totally have to give it a try! And WOW- look at all of these recipes... you should print out a readers' cookbook. :)
